Chinese Chicken Salad
is a colorful and tasty way to use up some leftover chicken and makes for a light lunch. I experimented with few different dressings and ultimately settled on this one which I think is just the right balance of soy sauce, rice vinegar, ginger, garlic, and sesame oil. Do you have a favorite Chinese chicken salad dressing? Please let us know about it in the comments.

Fruit Salad
works at the start of the meal or as a dessert. The fruit is lightly glazed with either a simple syrup or agave syrup. Ginger, a bit of lemon, and some savory thyme which pairs amazingly with summer fruits accents the tartness of the berries and the sweetness of the stone fruit.
My father would call these
Sandwiches
for “ladies who lunch”, and in fact, I first encountered them at a luncheon gathering of women friends. But one can’t really go wrong with lightly toasted flatbread and an
insalata Caprese
filling of tomatoes, fresh mozarella, and basil.
I made these
Burger
for a labor day weekend party and they were a hit! Love the spiciness and the coleslaw. Will definitely make them again. My slaw came out a little too “basil-y” so I will cut that back next time. Otherwise they were delicious!

I do a version of a
peanut butter and apple sandwich
that isn’t as healthy but is very, very tasty. It includes 2 slices of whole wheat bread smeared with peanut butter, thinly sliced apples layered over the peanut butter, a few slices of crisp bacon, a drizzle of honey over all and topped with alfalfa sprouts. I know it sounds weird but the combination of flavors is terrific!
My family started making this
tuna salad sandwiches
when I was kids and as far as I'm concerned theirs is the best and only way to make a tuna fish sandwich.Served on toasted French bread, this was a wonderful summer lunch! Tuna had become a tired old sandwich commodity in our house but this sandwich turned that on its head! This sophisticated tuna salad looks pretty and tastes divine.
